Kiri-Ba Nengon

kiri-bawholegroup This is a group of country folk paid by the State to maintain their traditions such as the dances Kiri-Ba and Nengon, their cuisine and their music. The rhythm of the son originated in this area and for Cubans this rhythm is sacred. I understood that this group is ¨protejido¨ and the word to me represented that they are protected like a national treasure.. But it simply meant that the State pays them a salary to maintain their traditions.

Typical food is cooked over a wood fire.  Here is a list of the dishes:
1. Potaje de frijoles caballero - soup with pork and white beans
2. Jaiba - freshwater crab.
3. Palmito con leche de coco - palm hearts cooked in coconut milk
4. Bacun - a tamale-like dish made of sweet bananas with meat stuffing
5. Croquettes de guineo - deep fried bananas
6. Fish cooked over a wood fire
7. Salad of tomatoes and green beans.
8. Rice cooked with achiote or a saffron like substance
